




A beautiful family birthday celebration brought us to Nemacolin Resort, where a proud father and his children came together for four wonderful days of fun, laughter, and memories in the woods.
Chef Mirko’s Personal Chef Service created a special evening featuring crispy rice cakes with spicy tuna, cauliflower hummus with blue corn chips, fresh-baked focaccia with three toppings, assorted greens with apple cider–poached golden beets, honey balsamic, crispy leek–dusted goat cheese, radishes, and blueberries.
Guests enjoyed a refreshing passionfruit, cucumber, melon, and mint shooter, followed by Alaskan salmon with spinach flan, roasted carrots, asparagus risotto, roasted tomato, and lemon saffron butter sauce. For the boys, filet mignon with chimichurri, Chianti wine reduction, roasted pearl onions, and baby turned potatoes.
Dessert was original Italian last-minute fried zeppole over strawberry sauce, berry compote, and powdered sugar.

Friends Gathering for a Gourmet Dinner with Personal Chef Mirko 🍷🍽️
What a wonderful evening filled with great friends, laughter, and an unforgettable culinary journey! Guests enjoyed a true Taste of Europe and Beyond, exploring unique flavors and ingredients from around the world.
The evening began with an elegant seafood combination of Salmon Poke in Avocado, Seared Tuna Sashimi, and Shrimp Ceviche, followed by a flavorful Boneless Frog Leg Ragout Provençale with black garlic syrup and young kale.
Next came a rich and comforting Escargot Fennel Chowder with twisted pastry and herb oil, followed by Suckling Pig Tenderloin over a spiced apple pancake with truffle honey dressing and micro arugula.
A refreshing Passionfruit Sorbet with Cilantro Crystals cleansed the palate before guests enjoyed perfectly seared Sea Scallops with black forbidden risotto, key lime essence, and asparagus.
The main course featured Berkshire Pork Tenderloin with morel mushroom cream, potato au gratin, and fresh market vegetables.
To finish the evening, guests were treated to Honey Bacon Apricot Cornbread served with maple ice cream—a perfect sweet ending to an extraordinary meal.

What a fantastic way to spend a sunny Saturday celebrating Cinco de Mayo! 🌞🎉
Last weekend’s business dinner was filled with amazing people, laughter, music, refreshing drinks, and incredible food prepared by personal chef Mirko. Guests enjoyed fresh margaritas, sangria, a full chip station, and a delicious spread of homemade specialties including black bean soup, gazpacho, watermelon and tomato salad, black bean salsa, mango salsa, guacamole, creamy cheese sauce, citrus chicken, slow-pulled pork shoulder, rice and beans, shrimp in garlic tomato sauce, Mexican vegetables, shrimp quesadillas, and so much more.
And of course, dessert did not disappoint — from classic tres leches cake to passionfruit panna cotta and homemade banana bread, there was something sweet for everyone to love. 🍹🌮🍤🍰

In Wheeling, WV, we had the honor of celebrating a very special 75th birthday with an elegant, multi-course dining experience.
The evening began with a roasted corn and cauliflower pancake, topped with quail egg, pickled tomato, and a delicate prosciutto crisp.
A trio of asparagus followed—featuring a white asparagus flan, a fresh salad with asparagus jelly and vinaigrette, and a green asparagus soup paired with an asparagus arancini.
To refresh the palate, guests enjoyed a prune–waldmeister–mango shooter finished with crispy lavender.
The pasta course highlighted homemade black ravioli filled with English Stilton and apple, served in a pear Chardonnay sauce with vegetable pearls.
For the fish course, a salmon medallion was presented over a spinach biscuit with olive oil–poached tomato, butternut squash purée, caviar, and broccoli microgreens.
The entrée featured Berkshire pork tenderloin medallions wrapped in applewood-smoked bacon, accompanied by spring vegetables and a roasted onion mustard sauce.
Dessert brought a sweet finish with Italian zeppole doughnuts over strawberry sauce, jellied blueberries, and pickled blueberries—followed by a classic Black Forest birthday cake, handcrafted by Chef Mirko.

Old friends gathered together and hired Mirko’s Private Chef Service to celebrate and rediscover the flavors of their German heritage. The evening turned into a wonderful journey through traditional tastes from home, presented as an eight-course tasting menu.
The experience began with a savory onion tart, accompanied by chicken liver mousse and pickled tomato.
Next came a delicate chicken consommé with quail egg and fresh chives.
The third course featured house-made German sausage served over sauerkraut, bringing comforting and authentic flavors to the table.
